Required Skills

• Grade 12 or equivalent
• Must have good knowledge and experience in cheese making
• At least 1 year experience in a food manufacturing environment
• Good communication skills
• Self motivator with good planning and organising skills
• Must be willing to work shifts, weekends, overtime and public holidays
• Know the principles of pasteurizing, acidification, coagulation and draining of cheese.
• Able to do physical hard work
• Good at problem solving

Duties & Responsibilities

• Assist the Production Artisan with day to day tasks to ensure that the production schedules are met.
• Receive milk from the cheese factory and pasteurise.
• Acidify milk according to SOP.
• Coagulate milk according to SOP.
• Drain curd when ready and monitor whey drainage. Turn curd at intervals.
• Test curd (moisture).
• Supply cheese to cooker.
• Cleaning: CIP and COP of equipment.
• Record keeping during all processes for traceability.
• Maintain quality, safety and food safety standards.
